1/2-- cup warm water 105*F to 110*F


1--cup water warm water 70*F


2--packages active dry yeast


1/2-- cup veg. oil


1/2-- sugar


2-- tea spoons salt


4 to 41/2-- cups flour (bread or all purpose)


method


mix yeast in to the 105 to 110*F water


let the mixture stand until foamy about 5 to 10 minuts.


stir the oil, sugar and salt into the 70*F water, add the yeast mixture add flour 1 cup at a time stir after each addition until all flour is added. after dough is well mixed.


place dough on a floured work surface.


kneed about 8 min. place dough in a large oiled bowl turn to coat both sides.place dough in a warm draft free place a cool oven is fine.cover dough with a kitchen towle or plastic wrap untill double in volume


return it to the floured work surface punch the dough down to remove most of the air.


Make up into bread or buns.


Should make 2 large or 3 small loafs bread or 2 to 21/2 doz. buns.let buns double in size . let bread rise until the crown of the loaf is 11/2 inches above sides of pan


bake at 375*F until a golden brown .


when thumped on bottom bread should have a hollow sound.Brush bread and buns with melted butter when they come out of oven . Cool bread on wire rack -- buns can cool in pan ---but better on rack also.

ONION SANDWICH BUNS





2 c warm water


1/4 c maple syrup


2 package dry yeast


1 onion, minced


1/4 c vegetable oil


1/8 teaspoon thyme


2 c whole wheat flour


1 c rye flour


3 c unbleached flour


1 T molasses


1 1/2 t salt


sesame seeds (optional)





Mix hot water and maple syrup. Sprinkle yeast into water and allow to proof while chopping onions.


Saute onions in oil until golden, 5-7 minutes, sitrring frequently.





Stir in yeast mixture, then all of the remaining ingredients.





Knead dough 8 to 10 minutes; place in greased, covered bowl and allow to rise until doubled in bulk, about 1 1/2 hours.





Punch down. Divide dough into 18 balls and flatten each ball into a 4-inch circle. Place on lightly greased pans. Allow to rise 1 hour.





Preheat oven to 375 degrees.





Lightly brush tops with an egg wash or melted butter and sprinkle with sesame seeds, if desired.





Bake 25-30 minutes.
