The following Irish Soda Bread Recipe is as authentic as one could get. This particular recipe comes from an Aunt who originally comes from a small village on the tip of the Dingle Peninsula, Ireland. This part of Ireland is part of the Gaeltacht, the name for areas of Ireland where the Irish language is still spoken everyday. This particular Aunt is an Irish speaker whose first language is Irish. Begin by preheating the oven to 350 degrees Fahrenheit so that it is ready for your bread straight away.

4 cups of flour


1 egg

3 teaspoons of baking powder

In a separate bowl lightly beat the egg into the butter milk


Add the egg and butter milk mixture into the flour mixture by hand, mixing in a little at a time and being careful to avoid over mixing.


Turn out on a lightly floured board and briefly knead to form a smooth dough.


Shape into a high, round ball.


Place onto a baking pan.


Slash a cross or x shape across the top of the dough.


Bake at 350F or 175C for 50 to 60 minutes.

IRISH SODA BREAD WITH RAISINS





4 1/2 c. flour


4 tsp. baking powder


1/2 tsp. baking soda


1 tsp. salt


3 tbsp. sugar


1 tbsp. caraway seeds


1 c. dark raisins


2 c. buttermilk


Butter


Sugar





Heat oven to 350 degrees. Grease a 9-inch cast iron skillet or cake pan and dust with flour.


Mix 4 cups flour with baking powder, baking soda, salt, sugar and caraway seeds. Add raisins, mixing them in with your fingers to make sure they are separated. Add buttermilk to bowl and mix with a fork until mixture forms a dough.





Sprinkle about 1/4 cup flour on a board or counter, turn out dough and knead for 5 minutes. Form dough into a smooth, round loaf about 8 inches in diameter. (If humidity is high, you may need to add another 1/4 cup flour to the board.) Press loaf evenly into pan and cut a cross 1/2 inch deep in the top.

Authentic Irish Soda Bread recipe





1 cup raisins


1 1/2 cups all-purpose flour


1 1/2 teaspoons baking powder


1/2 teaspoon salt


1/2 cup granulated sugar


2 tablespoons lard


3/4 cup milk


1 egg


3 teaspoons caraway seeds





Boil raisins for 3 minutes, then drain and dust lightly with a little flour.





Sift together with the remaining flour, baking powder, salt and sugar. Rub in the lard with hands. Add milk, egg, and caraway seeds and pour into a greased and floured loaf pan. Bake in a preheated 350 degree F oven for 1 hour.

IRISH SODA BREAD





ingredients


4 cups all-purpose flour


1 1/2 teaspoons baking soda


1 teaspoon salt


1 tablespoon sugar


1 1/2 tablespoons caraway seeds


1 cup raisins


1 3/4 cups well-shaken buttermilk


2 tablespoons unsalted butter, melted


preparation


Preheat oven to 375掳F. Butter and flour a large baking sheet, knocking off excess flour.





Sift together 4 cups flour, baking soda, and salt into a large bowl and stir in sugar, caraway, and raisins. Add buttermilk and stir just until dough is evenly moistened but still lumpy.





Transfer dough to a well-floured surface and gently knead with floured hands about 8 times to form a soft but slightly less sticky dough. Halve dough and form into 2 balls. Pat out each ball into a domed 6-inch round on baking sheet. Cut a 1/2-inch-deep X on top of each loaf with a sharp knife, then brush loaves with butter.





Bake in middle of oven until golden brown and bottoms sound hollow when tapped, 35 to 40 minutes. Transfer loaves to racks to cool completely.
Why do you think somebody in Ireland will have a recipe for soda bread with caraway and raisins? Caraway and raisins aren't native Irish ingredients. Why not just make your favourite soda bread and add a handful of caraway and raisins to it?
