Need awesome banana bread recipe (or advice) please!?

I have a ton of overripe bananas and I want to make banana bread for my dear husband (who loves loves loves bananas).





What's the secret to good banana bread? If you have a recipe to share, please make sure it's something that you've made and people rave about! I'm not interested in just some random recipe that you've googled. I can do that. I need a recipe that you can stand behind, ok?Need awesome banana bread recipe (or advice) please!?
I've been a stay-at-home mom for 24 years. I live in a rural area, make my own breads, jams, jellies... I'm very old-fashioned, and practically live in my kitchen. I also collect cookbooks, and have, at last count, 235 of time. Yes, I actually use these cookbooks, always on the lookout for something different or delicious.





About 20 years ago, I purchased a copy of The Great Tomato Patch Cookbook. It was published by the Pitcairn (Pittsburgh) food bank, with all proceeds benefiting the food bank and various charitable services.





It's not your typical community cookbook. These recipes come from dignitaries, chefs, celebrities, and food connoisseurs around the world. Each recipe is surprisingly simple to prepare, and absolutely delicious. One stands out above all others --Dale's Banana Bread.





The recipe wasn't submitted by Dale herself. It was forced out of her under coercion, and submitted by one of her friends. After discovering Dale's recipe, I have made hundreds of loaves, and have given many as gifts. Everyone loves it.





This recipe will not disappoint. Enjoy. Oh, the secret as to what makes this bread so luscious? It's the addition of sour cream.








Dale's Banana Bread





1 stick butter, softened


2 eggs, well beaten


1/4 cup sour cream


1 teaspoon baking soda


1 cup mashed bananas


1 1/2 cups sifted flour


1 1/2 teaspoons baking powder


1 teaspoon vanilla


1/4 teaspoon salt


1 cup chopped nuts (optional)





Preheat oven to 350*F. Grease and flour 1 9'x5' loaf pan.





Cream butter and sugar. Add eggs. Add sour cream which has been mixed with baking soda. Stir in bananas. Add flour, baking powder, vanilla, and salt. Stir in nuts, if desired. Pour into prepared pan and bake for one hour or until toothpick inserted near center comes out clean.





Remove from pan to cool on rack.





Makes one loaf.








EDIT: Don't throw out any bananas that you are unable to use. Simply mash then with a fork, measure the amount you will need for your recipe (depending on which of these you choose) and freeze in a zip-lock baggie. I do this all the time.





When I'm ready to bake, I simply remove a package from the freezer, let thaw for an hour or so, and add directly to my recipe. By freezing the bananas only, you save loads of freezer space. You can do this with just about any ingredient that would work in quick breads and muffins. Most items freeze very well.Need awesome banana bread recipe (or advice) please!?
RedQueen - I like the sound of your recipe, but I noticed in the beginning when you explain what to do you say 'Cream butter and sugar' but it doesnt say above how much sugar is in the recipe? would you be able to find that out and let me know because I am really interested in trying out this recipe Report Abuse

Glorious Banana Bread


1/3 cup packed brown sugar


1/3 cup granulated sugar


1/4 cup Sunsweet Lighter Bake


2 large eggs


1 1/2 cups mashed ripe banana


2 cups all-purpose flour


1 1/2 teaspoons baking powder


1/2 teaspoon baking soda


1/2 teaspoon salt


1 cup chopped walnuts (optional)





Coat 9 x 5-inch loaf pan with cooking spray; set aside.





Beat together sugars, Lighter Bake, eggs and banana.





Combine flour, baking powder, baking soda and salt; stir into batter until just moistened. Stir in walnuts. Spoon batter into prepared pan. Bake in preheated 350 degrees F oven for 55 to 60 minutes or until wooden pick inserted into center comes out clean.





Cool 10 minutes. Remove from pan and cool completely on rack. Bread can be wrapped in foil and frozen for up to 1 month.

INGREDIENTS





* 2 cups all-purpose flour


* 1 cup white sugar


* 1 teaspoon baking soda


* 1/2 teaspoon salt


* 1/2 cup vegetable oil


* 1 egg


* 3 ripe bananas, mashed


* 1/4 cup chopped walnuts





DIRECTIONS





1. Preheat the oven to 350 degrees F / 175 degrees C.





2. Place some muffin cups in muffin tin or grease the tin with some butter.





3. Mix the sugar, oil and egg until creamy and light yellow. Add bananas and walnuts. Add flour, baking soda, and salt. Stir until completely smooth. Spoon the batter into the muffin tin.





3. Bake for 30 to 40 minutes, until toothpick poked in center muffin comes out clean.

Melt in Your Mouth Banana Bread Recipe


I searched and searched for the best banana bread recipe and I have never found one that can add up to this one. It is delicious. Exactly what I was looking for, so here it is. I hope you like it as much as we do.





1 hour | 5 min prep





Ingredients:


2/3 cup oil


2 large eggs


1 cups mashed ripe bananas


1 cups plain flour


1 cups sugar


1 (3 1/2 ounce) box French vanilla instant pudding


1/2 teaspoon salt


1/2 teaspoon baking soda





Preheat oven to 325掳F.





Directions:


Mix oil, eggs and mashed bananas.


Combine remaining ingredients and add to banana mixture.


Bake in a 9 x 5 x 3 inch pan at 325 for 1 hour or until it test done. Some ovens vary in temps. (Ff you are following the recipe, there is no need to grease the pan)





**This can easily be doubled for two loaves.
Oh ya, hands down! A great recipe.


1 C sugar


1/3 C butter


2 eggs


3 bananas


1/3 C water


1 2/3 C flour


1 tsp baking soda


1/2 tsp salt


1/4 tsp baking powder


1/2 C chopped pecans or walnuts


Mix the wet, mix the dry. I'm sure you know what to do.


I bake at 340 or 345 for 55 - 60 minutes.


I sometimes add an orange or lemon glaze over top if I am making a few loaves.

I found this recipe awhile back on All Recipes.com, I have made this many, many times and everyone RAVES about it. The crumb topping really makes a big difference. I usually use the recipe for muffins but you can make it as a bread in a loaf pan as well. I am telling you, you can't go wrong with this recipe!!! INGREDIENTS (Nutrition)


1 1/2 cups all-purpose flour


1 teaspoon baking soda


1 teaspoon baking powder


1/2 teaspoon salt


3 bananas, mashed


3/4 cup white sugar


1 egg, lightly beaten


1/3 cup butter, melted


1/3 cup packed brown sugar


2 tablespoons all-purpose flour


1/8 teaspoon ground cinnamon


1 tablespoon butter











DIRECTIONS


Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.


In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.


In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.


Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Cocoa Banana Nut Bread





2 extra ripe bananas, peeled and cut into chunks


1 1/2 cups flour


1/1/3 cups sugar


6 T. unsweetened cocoa


1 t. baking soda


1/2 t. salt


1/4 t. baking powder


2 eggs


1/2 cup vegetable oil


1/3 cup chopped nuts





Preheat oven to 350. Puree bananas in food processor or blender 91 cup puree). In large bowl, combine flour, sugar, cocoa, baking soda, salt and baking powder. Add eggs, oil, and bananas; mix just until dry ingredients are moistened. Stir in nuts. Pour batter into greased 9 x 5 inch loaf pan. Bake 55 to 60 minutes or until wooden toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove form pan. Cool completely before slicing. Loaf may be stored in refrigerator, well wrapped for up to 1 week.


Makes 1 loaf


Muffins: Follow recipe, omitting nuts in batter. Spoon scant 1/2 cup batter into 10 greased 6 oz. custard cups or muffin cups. Top each muffin with 1 t. chopped nuts. Bake 20 to 22 minutes or until wooden toothpick inserted in center comes out clean. Serve warm.


Makes 10 muffins





Banana Bread





1 pkg. Betty Crocker Supermoist yellow cake mix


1 cup mashed very ripe bananas (about 2 medium)


1/2 cup buttermilk


1/3 cup vegetable oil


3 eggs


1 cup chopped nuts, if desired





Heat oven to 350. Grease 2 loaf pans, 8 x 4 inches or 9 x 5 inches, with shortening. Lightly flour. Beat cake mix, bananas, buttermilk, oil and eggs in large bowl with mixer on low speed 30 seconds; beat on medium speed 2 minutes. pour into pans. Sprinkle each loaf with 1/2 cup nuts. Bake 8 inch loaves 50 to 60 minutes, 9 inch loaves 40 to 45 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove pans to wire rack. Cool completely, about 1 hour. Wrap tightly and store at room temperature up to 4 days or refrigerate up to 10 days.
