My Mom's Best Bread Pudding
INGREDIENTS
1 quart whole milk
1/2 cup white sugar
1/2 cup butter, chilled
1/4 teaspoon salt
1 teaspoon ground nutmeg
12 slices bread
4 eggs, well beaten
1 cup water
1/2 cup white sugar
3 tablespoons cornstarch
1/4 cup butter
1 tablespoon ground nutmeg
DIRECTIONS
In a large saucepan over medium-low heat, heat milk until bubbles just begin to form at edges. Remove from heat and stir in 1/2 cup sugar, 1/2 cup butter and salt. Stir until sugar dissolves. Let stand until butter melts entirely.
Preheat oven to 350 degrees F (175 degrees C). Butter a 4 quart casserole and dust generously with nutmeg.
Tear bread apart, 2 slices at a time, into 2 inch pieces and stir into milk mixture. Gently stir beaten eggs into milk mixture. Pour into prepared pan and sprinkle the surface with nutmeg.
Line a roasting pan with a damp kitchen towel. Place baking dish on towel, inside roasting pan, and place roasting pan on oven rack. Fill roasting pan with boiling water to reach halfway up the sides of the baking dish. Bake 45 minutes, until center is almost set. Serve warm with hard sauce.
Hard sauce: In a small saucepan over medium heat, combine water, 1/2 cup sugar, cornstarch, 1/4 cup butter and 1 tablespoon nutmeg. Bring to a rolling boil, remove from heat and set aside until serving.

If you like to try things that are a little different here's a good one.
1 (4.6-ounce) box instant vanilla pudding mix (recommended: Jell-O)
2 (12-ounce) cans evaporated milk
1/2 teaspoon almond extract
1/2 teaspoon pumpkin pie spice
1 pound leftover or store-bought cinnamon rolls, quartered
1 1/2 cups chopped dates or raisins
1/4 cup chopped almonds or pecans
4 tablespoons butter, cut into small pieces
Preheat oven to 350 degrees F.
Lightly spray the inside of a 3-quart casserole with butter-flavored cooking spray; set aside.
In a medium bowl, whisk together pudding mix, evaporated milk, almond extract, and pumpkin pie spice. Add rolls, raisins, and pecans to bowl. Stir together until well combined and bread is saturated.
Transfer to prepared casserole dish and dot with butter.
Bake bread pudding in preheated oven for 1 hour to 1 hour 10 minutes or until knife inserted into center comes out clean.
Remove from oven and serve warm in martini glasses.
And here's one a little more traditional....
2 cups granulated sugar
5 large beaten eggs
2 cups milk
2 teaspoons pure vanilla extract
3 cups cubed Italian bread, allow to stale overnight in a bowl
1 cup packed light brown sugar
1/4 cup (1/2 stick) butter, softened
1 cup chopped pecans
For the sauce:
1 cup granulated sugar
1/2 cup (1 stick) butter, melted
1 egg, beaten
2 teaspoons pure vanilla extract
1/4 cup brandy
Preheat the oven to 350 degrees F. Grease a 13 by 9 by 2-inch pan.
Mix together granulated sugar, eggs, and milk in a bowl; add vanilla. Pour over cubed bread and let sit for 10 minutes.
In another bowl, mix and crumble together brown sugar, butter, and pecans.
Pour bread mixture into prepared pan. Sprinkle brown sugar mixture over the top and bake for 35 to 45 minutes, or until set. Remove from oven.
For the sauce:
Mix together the granulated sugar, butter, egg, and vanilla in a saucepan over medium heat. Stir together until the sugar is melted. Add the brandy, stirring well. Pour over bread pudding. Serve warm or cold.Anyone have a good bread pudding recipe?

8 slices of bread cut into 1 inch squares...and set aside
combine
2 1/2 cups milk
3 eggs
2/3 Cups sugar
1/4 salt
2 tbsp melted butter
1Tbsp almond extract or vanilla

Add bread and mix well,and pour into buttered 8 inch casserole dish.sprinkle with more nutmeg
Bake at 350 for 45 mins
Maldivian Bread Pudding
10 slices of bread
1 tin condensed milk
3 eggs
1/4 salt
2 tbsp melted butter
1tbsp banana essence (if ur a banana person) or
1 tbsp vanilla essence
1/3 tsp green colour
Water (as required)
Mix everything... including the bread and bake :-)
BREAD PUDDING
1 cup bread
2 cups milk
2 eggs
2 Tablespoons sugar
1/4 cup sugar
grated lemon rind
lemon flavoring
Remove crusts from bread. Pour milk over soft bread. Allow to stand until soft, about 30 minutes.
Separate eggs.
Add egg yolks, slightly beaten, 2 Tablespoons sugar, and grated rind of 1 lemon.
Pour into buttered baking dish and set in pan of water to bake until it sets.
Beat egg whites until stiff, gradually adding scant 1/4 cup sugar while beating, and a dash of lemon extract, lemoncello, or lemon juice (whatever you have). Spread the egg white mixture out on top of the pudding while still warm, then return to oven until slightly golden brown.
Cool, and just before serving add a spoon of tart jelly in the center of the meringue of each serving.
BANANA BREAD PUDDING
1 loaf day old Italian or French bread
3 eggs
1 scant cup sugar
1 quart milk or half and half
1 1/2 tablespoons vanilla
4 large ripe bananas, mashed
1/2 teaspoon freshly grated nutmeg
1 teaspoon cinnamon, divided in half
1 cup raisins
1/2 teaspoon fresh, finely grated ginger root
2 tablespoons dark rum or banana liqueur
Put the raisins in the rum or liqueur, and warm briefly in the microwave (20-30 seconds). Allow to sit at least 30 minutes. Stir in 1/2 teaspoon cinnamon and mix well.
Cube the loaf of bread, put it in a bowl with the milk and allow to stand for an hour.
Meanwhile, in a separate bowl, beat together the eggs, sugar, vanilla, and remaining spices. Mash the bananas and combine all ingredients together.
Turn out into a lightly greased 10X12 or 9X13 inch baking dish and bake at 325 degrees for 70-75 minutes or until edges are golden and toothpick inserted in center comes out nearly clean (same test as for cakes).
Cool and serve with whipped cream or banana sauce below.
Optional Banana Liqueur Sauce:
1 banana sliced
1 tablespoon butter
1 tablespoon banana liquor
1 tablespoon sugar
Saute sliced banana in butter over high heat for 2 minutes, add sugar and liqueur and remove from heat. Stir well and serve over banana pudding. Top with whipped cream.
BLUEBERRY BREAD PUDDING WITH GOLDEN
DESSERT SAUCE
Golden Sauce:
3 t. butter
1/2 c. sugar
1 c. whipping cream
3 t. brandy (may be omitted)
Bread Pudding:
3 t. soft butter
3/4 c. sugar
3 eggs
2 t. vanilla
3 1/2 c. milk
8 c. bread cubes cut to 1'; square or smaller (sourdough loaf or any heavy bread)
1 3/4 c. fresh blueberries
2 t. sugar
1/2 t. cinnamon
Prepare Golden Dessert Sauce:
In medium pan, combine butter and sugar. Cook and stir over low heat until butter is melted. Stir in cream, and if desired, brandy.
Bring to a boil while continuously stirring; reduce heat. Boil gently, uncovered, for 5-10 minutes or until sauce is slightly thickened. Refrigerate if not using in 2 hours. Reheat when serving.
In a large mixing bowl, beat butter and sugar with electric mixer on med/high speed until well combined. Add eggs and vanilla; beat 2-3 minutes or until fluffy. Slowly stir in milk.
Place bread cubes in extra large bowl; pour milk mixture over the bread and mix well, soaking all cubes. Let stand 5 minutes.
Gently stir blueberries into bread mixture; transfer to an ungreased 3-quart baking dish. Combine 2 tablespoons sugar and cinnamon; sprinkle evenly over mixture.
Drizzle 1/3 cup of Golden Dessert Sauce over top.
Bake about 35 minutes or until knife inserted comes out clean.
Serve warm with additional Golden sauce spooned over individual servings.
***Refrigerate left-overs - reheat in the microwave when serving - enjoy anytime!***
This is very old and very simple.
Cream 1 Tbs. sugar with a tsp of butter
Beat in 5 eggs, large
Tear 2 slices white bread into small pieces and mix in with eggs. Add milk to within 1 inch from top of casserole. Sprinkle with nutmeg. Bake at 300 for an hour or until knife inserted comes out clean. Bon appetite!

mix sugar, eggs, and milk in a bowl...add vanilla...pour over cubed bread and let sit for 10 minutes......in another bowl mix and crumble brown sugar, butter and pecans.....pour bread mixture into greased pan...top with brown sugar mixture...bake for 25-35 minutes till set...remove from oven...
For sauce
1 cup granulated sugar
1/2 stick butter, melted
1 egg
2 tsp vanilla
1/4 cup brandy or bourbon
mix together the sugar, butter, egg, vanilla in saucepan till sugar is melted...add brandy and stir to mix.....pour over bread pudding...serve warm or cold!!!!!
