BREAD Recipe?

Can any one give me the perfect bread recipe please.





Not bread machine but proper bread.





All the bread that i make seem to come out kind of rubbery in texture and a bit dry..

Perfect Whole Wheat Bread





This bread turns out soft as the 1/2 white 1/2 wheat recipe, but is better for you. Makes 5 loaves.





6 cups warm water


3 1/2 cups hard white wheat flour


3 1/2 cups hard red wheat flour


2 cups high gluten bread flour


3 tablespoons yeast


3 tablespoons bread enhancer


2 tablespoons sea salt


2/3 cup canola oil


2/3 cup honey


5 cups whole wheat flour (more or less)





Combine first 8 ingredients. Mix well.


Add whole wheat flour until dough is sticky but not wet.


Turn out onto oiled surface. Divide into 5 even portions. Put into greased bread pans.


Cover with a cloth and let rise @ 1/2 hour or until a slight rise is visible.


bake in preheated 350 degree oven for 30 minutes.


Turn out baked loaves onto cooling rack and let cool at least 1 hour before slicing or putting into a bag. Freezes well for 1 month if tightly wrapped.

Perfect Bread





Yield: 2 oaves





Ingredients:


1 package active dry yeast


1/4 cup lukewarm water


2 tablespoons sugar


2 teaspoons salt


1/4 cup Crisco庐 Vegetable Oil


1 cup skim milk


3/4 cup water


5 to 6 cups Pillsbury BEST庐 All Purpose Flour





Preparation Directions:





Heat oven to 400潞F.


Soften yeast in 1/4 cup lukewarm water. Combine sugar, salt and oil in mixing bowl. Stir in hot skim milk.


Add 3/4 cup water and cool to lukewarm. Stir in 1 cup flour. Add yeast and 2 more cups flour. Beat with spoon until batter is smooth and elastic.


Stir in another 1-1/2 cups flour, then work in enough flour to make a soft dough that doesn't stick to your fingers.


Turn onto lightly floured surface and knead about 100 strokes. Place dough in a large oiled bowl and oil surface of dough lightly.


Cover with a towel and let rise until double in bulk, about 1-1/2 hours.


Punch down and turn onto lightly floured surface. Cut dough in half and shape each half into a smooth ball


Flatten each ball into a 10 x 9 x 1-inch rectangle. Fold each end of the rectangle toward the center and press down firmly.


Pinch together along center fold and at ends of dough. Place seam-side down in oiled 9 x 5 x 3-inch loaf pan. Cover with towel and let rise until double in bulk, about 1 hour.


Bake at 400潞F 45-50 minutes, until golden brown. Remove from pans at once and place in a cooling rack.

BOSTON BROWN BREAD





1 c. whole wheat flour


1 c. med. rye flour


1 c. yellow cornmeal


1 1/2 tsp. baking soda


1 tsp. salt


1 c. raisins (opt.)


2 c. buttermilk, room temp.


3/4 c. molasses





Generously grease 2 (1 pound) coffee cans or 3 (1 lb.) vegetable or fruit cans; set aside. In a large bowl, combine whole wheat flour, rye flour, cornmeal, baking soda and salt. Add raisins, if desired. Toss to separate and coat with flour mixture.


In a medium bowl, combine buttermilk and molasses. Stir into flour mixture only until dry ingredients are moistened. Turn into prepared cans, filling evenly. Cover cans tightly with 2 layers of foil; tie with string. Place a rack in a large kettle. Place cans on rack. Place kettle over low heat. Add boiling water until halfway up cans. Cover; bring water to a gentle boil. Steam bread 2 1/2 to 3 hours or until a wooden pick inserted in center comes out clean. Add more boiling water during steaming, if necessary. Carefully remove bread from cans. Cool on racks at least 30 minutes before slicing. Makes 2 or 3 small loaves.





VARIATIONS:





APRICOT BOSTON-BROWN BREAD: Substitute 1 cup finely chopped apricots or 1/2 cup chopped apricots plus 1/2 cup raisins for 1 cup raisins.





BAKED BROWN BREAD: Generously grease a 2 quart casserole dish or 9';x5'; loaf pan. Preheat oven to 325 degrees. Turn batter into prepared pan. Bake 1 hour or until a wooden pick inserted in center comes out clean.

for your liquid, try using potato water (save it from the potatoes you boiled the night before)--put it in the fridge to keep til you are ready to use it----gives a soft velvety texture to the bread
i just made a batter bread recipe i got from searching online and i will be adding it to my recipe box now. it turned out wonderful with no rubbery texture to it...was also lacking the dryness....my family loved it and it was easy to make!!

EASIEST BREAD RECIPE








Makes 1 loaf.





3 cups all-purpose flour


2 tablespoons sugar


1 envelope FLEISCHMANN鈥橲 RapidRise Yeast


1-1/4 teaspoons salt


3 tablespoons butter or margarine,


cut into pieces


1 egg


3/4 cup warm water (120掳 to 130掳F)





Directions


Insert metal blade in food processor bowl. Add flour, sugar, undissolved yeast, and salt; process 5 to 10 seconds to combine. Add butter and egg. Begin processing, then slowly pour warm water through feed tube just until dough forms a ball, about 10 to 15 seconds (all water may not be needed). Continue processing for 60 seconds to knead dough. Carefully remove dough from processor bowl to lightly floured surface. Cover; let rest on floured surface 10 minutes.





Roll dough to 12 x 7-inch rectangle. Beginning at short end, roll up tightly as for jelly roll. Pinch seam and ends to seal. Place, seam side down, in greased 8-1/2 x 4-1/2-inch loaf pan. Cover; let rise in warm, draft-free place until doubled in size, about 30 to 45 minutes.





Bake at 375掳F for 30 minutes or until done. Remove from pan; let cool on wire rack.
sure here is my recipe for beer bread and it comes out great . 3 c self rising flour,2 tblsp sugar and 1 (12oz) can of beer . make sure you grease the loaf pan really good . mix all ingredients together and then put in the greased loaf pan . Bake at 350 for one hour . It comes out delicious. good luck .
This is the easiest bread recipe and it always comes out great! It's called ';Brothers Bread.';





2-5 Cups Flour


1 Tbsp. Olive Oil


1 Tbsp. Salt


1 Tbsp. Sugar


1 Package of Yeast


2 Cups Warm Water





Put the warm water, yeast, olive oil, sugar and salt in a bowl and stir together. Let sit for 5 min. Start adding the flour until you have the desired consistency for dough. Kneed it on a floured surface for 8-10 minutes and let rise for 20-30 minutes. After it rises, punch it down and put it on a baking sheet in a 375 degree oven. Bake for 30-40 minutes.
