you can always use the liquid egg substitutes

You can also substitute 1 egg with a generous tablespoon of plain yogurt, it helps keep the dish moist and adds tons of flavor.

Sorry thats not a receipe but there is a lot of egg free recepies on eggfreebaking.comDoes anyone know a recipe for egg free bread and butter pudding?
Here is what I found:

Bread and Butter Pudding (Without Eggs).

Slice sufficient white or brown bread (stale) to fill a good-sized pie dish, and spread each slice thinly with butter. Grease the dish, then lay in the slices, sprinkling some currants, sultanas, and sliced candied peel between each layer, adding a little sugar and spice also. Then moisten the bread with a cup of milk. Prepare a pint custard (see direction for Custard, page 41), and pour over while hot, grate nutmeg on; bake as usual.

To Make a Custard.

From a pint of new milk take enough to mix smooth one large dessertspoonful of Edmonds' Custard Powder, sweeten the remainder of the milk to taste (say, a heaped dessertspoonful sugar), and when the milk is boiling, pour the mixed custard into it, stir and pour immediately into jug. When cold, place in glasses (grate nutmeg on if desired).

Vegan Bread %26amp; Butter Pudding

Ingredients

Ingredients

3 pieces of bread from a small loaf

vegan margarine

2 tsp 'orgran' egg replacer

4 fl oz soya milk (use vegan chocolate milkshake for double chocolate!)

20g chopped chocolate

4tsp sugar (use 2tsp if you are using chocolate milkshake)

Instructions

1. Grease 4 ramekin dishes with vegan margarine.

2. Spread vegan margarine thinly onto bread, then cut into small rectangles (about the same height as the dish). Line the dish with the bread, reserving 4 rectangles for the tops.

3. Sprinkle half the chocolate over the bread.

4. Whisk egg replacer, milk/milkshake and sugar in a jug. Pour most of the mixture into the middle of the dishes. Put the remaining rectangles of bread on top, then pour the rest of the milk mixture over the top.

5. Sprinkle with the remaining chocolate, and bake at 180潞C/350潞F until cooked.

I think you need the eggs to make a custard as that is what holds together the traditional bread pudding. Check vegan sites as they seem to have developed lots of way around those kinds of things.

Have you ever googled ';egg free bread pudding'; ? I just did and came up with several variations. You might want to check it out as only you know what you do or do not want in your recipes.
