Here's one:





Sweet Swedish Rye


1 c. milk


2 1/2 c. shortening


1/2 c. sugar


1 tsp. ground anise


1 1/4 c. water (divided - 1 cup and 1/4 cup)


2 c. rye flour


1/2 cup molasses


1 tsp. salt


2 pkg. dry yeast


1 Tblsp sugar


4 to 5 cups white flour





Scald milk, add 1 cup water, shortening, molasses, sugar, salt and anise. Dissolve yeast in 1/4 cup warm water and 1 tablespoon sugar. When lukewarm, add yeast, rye flour, and mix until smooth. Add white flour until dough is easy to handle. Knead until smooth...about 10 minutes. Place in greased bowl and let rise until doubled in a warm place (about an hour). Form into 3 balls and let rest 15 minutes. Form into loaves and place in a well-greased pan. Let rise in a warm place until doubles again (about 30 minutes). Bake at 375 for 35-40 minutes. Remove from oven and brush with melted butter.

Chipas (Argentinean Cheese Bread)





';These delicious, Argentinean breads are small balls of cheese bread made from tapioca starch. They are quick and very easy to make. You could even make the dough ahead of time and keep it in the freezer. If you cannot find Argentinean cheeses, Italian cheese will do just fine.';





Original recipe yield:

INGREDIENTS


1 egg


2/3 cup milk


6 ounces shredded Italian cheese blend


3 tablespoons butter, melted


1 3/4 cups tapioca starch


1 cup self-rising flour


DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C). Oil a baking sheet with cooking spray and set aside.


Stir together egg, milk, cheese, and butter in a large bowl. Sprinkle in tapioca starch and flour; stir in to form a dough. Knead dough for two minutes on a lightly floured surface, then roll into golf ball-sized pieces, and place onto prepared baking sheet.


Bake in preheated oven until golden brown, 10 to 15 minutes.





Peppy's Pita Bread





Original recipe yield: 8 pitas





PREP TIME 30 Min


COOK TIME 15 Min


READY IN 3 Hrs 20 Min





INGREDIENTS


1 1/8 cups warm water (110 degrees F/45 degrees C)


3 cups all-purpose flour


1 teaspoon salt


1 tablespoon vegetable oil


1 1/2 teaspoons white sugar


1 1/2 teaspoons active dry yeast





DIRECTIONS


Place all ingredients in bread pan of your bread machine, select Dough setting and start. When dough has risen long enough, machine will beep.


Turn dough onto a lightly floured surface. Gently roll and stretch dough into a 12 inch rope. With a sharp knife, divide dough into 8 pieces. Roll each into a smooth ball. With a rolling pin, roll each ball into a 6 to 7 inch circle. Set aside on a lightly floured countertop. cover with a towel. Let pitas rise about 30 minutes until slightly puffy.


Preheat oven to 500 degrees F (260 degrees C). Place 2 or 3 pitas on a wire cake rack. Place cake rack directly on oven rack. Bake pitas 4 to 5 minutes until puffed and tops begin to brown. Remove from oven and immediately place pitas in a sealed brown paper bag or cover them with a damp kitchen towel until soft. Once pitas a softened, either cut in half or split top edge for half or whole pitas. They can be stored in a plastic bag in the refrigerator for several days or in the freezer for 1 or 2 months.
