OK first to substituting eggs...here is a list of substitutes(each=1egg)As Binders
1/2 large mashed banana or
1/4 cup apple sauce or pureed prunes or
1 tablespoon ground flaxseed mixed with 3 tablespoons water
1 1/2 tablespoons water, 1 1/2 tablespoons oil, and 1 teaspoon baking powder
Combine one packet of unflavored gelatin with one cup boiling water - 3 tablespoons of this mixture equal one egg
1 tablespoon apricot puree
1/4 cup of soft tofu
1/4 cup soy milk
Now to the recipe..just substitute the egg with one of the binders(fruit puree would be good in pudding)

10 slices bread
1 1/4 cups milk
1/4 cup butter, melted
1/3 cup brown sugar
2 teaspoons mixed spice
1 egg, beaten
1 cup chopped dried mixed fruit

DIRECTIONS:
Cut the crusts from the bread, tear bread into pieces, place in a bowl and cover with milk. Let rest 30 minutes.
Preheat oven to 350 degrees F (175 degrees C). Butter a 1 1/2 quart baking dish.
Beat melted butter, sugar, mixed spice and egg together until smooth. Beat together with soaked bread and milk. Stir in dried fruit and orange zest. Pour into prepared dish and sprinkle with nutmeg.

good luck finding a bread pudding recipe with no eggs. I just looked all over the internet for you and found nothing.
i wish i had this for myself, i have this really old cookbook that my b/f's mother is letting me use and it has:
brazil-nut bread, brwon steamed bread, chocolate bread, orange marmalde bread, raisin honey bread,and all these are pudding receipes. if you would like any of them just let me know
