3 or 4 ripe bananas, smashed


1/3 cup melted butter


1 cup sugar (can easily reduce to 3/4 cup)


1 egg, beaten


1 teaspoon vanilla

No need for a mixer for this recipe. Preheat the oven to 350掳F (175掳C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. DIRECTIONS

Stir in the mashed bananas and vanilla. Add flour, baking powder, and soda; mix until batter is just moist.


In a small bowl, mix together chopped pecans, 2 tablespoons brown sugar, and cinnamon.


Divide 1/2 batter into two greased and floured 8x4 inch loaf pans. Sprinkle pecan mixture over batter in pans, and top with remaining batter.


Bake at 350 degrees F (175 degrees C) for 45 minutes, or until an inserted toothpick comes out clean
Have I got the cure for you. This won blue ribbons for years.


Prepare 1 package of white cake mix as per instructions.


smash 2 or 3 over riped bananas and add to cake mix batter.


Bake as directed.
SUPER simple. get a box of banana bread mix by the cake mixes. follow instructions on box, stir in 3 semi- brown bananas and pecans or walnuts. say you made it from scratch. :)

Coconut-Pineapple Banana Bread





2 cups all-purpose flour


3/4 teaspoon baking soda


1/2 teaspoon salt


1/2 teaspoon ground nutmeg


1/2 teaspoon ground ginger


3/4 cup granulated sugar


1/4 cup canola oil


1/4 cup nonfat plain yogurt


2 eggs


2 medium ripe bananas, mashed


1 tablespoon vanilla extract


8 ounces canned crushed pineapple, drained


1/2 cup chopped walnuts


1/2 cup sweetened flaked coconut











1. Preheat oven to 350F.


2. Spray 9 x 5-inch loaf pan with cooking spray.


3. Combine flour, baking soda, salt, nutmeg and ginger in a bowl and stir with a whisk to combine.


4. Set aside.


5. Place sugar, oil, yogurt and eggs in mixer bowl and beat at medium speed until well blended.


6. Add banana, vanilla and pineapple.


7. Mix until blended.


8. Add flour mixture and beat on low until just moist.


9. Stir in walnuts and coconut.


10. Put batter in loaf pan and bake 60-70 minutes or until a wooden pick inserted in center comes out clean.


11. Cool in pan 10 minutes on wire rack.


12. Remove from pan and cool completely.


13. Store in airtight container.

Heavy bread made from coarsely ground rye is my favorite, though I don't like it baked a long time like pumpernickel.
We actually like crusty French bread or a rustic Italian herb bread with soups
If there is an Outback near you just go pick up a couple of loaves of there brown bread...It is my favorite!!!

It depends on whether the recipe intends the chocolate chips to make the bread itself chocolatey (like brownies) or just to be melty but not blended in with the batter (like in choc. chip cookies). If the recipe also calls for cocoa powder, it's probably the latter. If it calls for the chips to be melted before being added to the batter, it's the former.





If the latter, you could use m%26amp;m's, which would give the bread some texture and color (but might look kind of tacky?). If not, definitely go with the kisses.

    1 cup bread


    2 cups milk

    I think this is more of a 'triffle' if that is the right name - but layering buttered bread slices with out the crust in a case role dish with sugar, fruit jam, and cream - usually I make at least 5-6 layers and then put a plate on the top and a heavy can to weigh/press it down and refrigerate overnight then unmold and serve with whipped cream and fresh fruit

    2 cups granulated sugar


    5 large beaten eggs


    2 cups milk


    2 teaspoons pure vanilla extract


    3 cups cubed Italian bread, allow to stale overnight in a bowl


    1 cup packed light brown sugar


    1/4 cup (1/2 stick) butter, softened


    1 cup chopped pecans








    Preheat the oven to 350 degrees F. Grease a 13 by 9 by 2-inch pan.


    Mix together granulated sugar, eggs, and milk in a bowl; add vanilla. Pour over cubed bread and let sit for 10 minutes.





    In another bowl, mix and crumble together brown sugar, butter, and pecans.





    Pour bread mixture into prepared pan. Sprinkle brown sugar mixture over the top and bake for 35 to 45 minutes, or until set. Remove from oven.
    This is simple and I guess kinda plain.





    1 loaf store bought frosted or unfrosted cinnamon raisin bread, unsliced


    1/2 stick butter, softened


    1 can sweetened condensed or reduced fat sweetened condensed milk


    2 jiggers brandy


    Whipped cream in spray top canister from your dairy aisle


    Ground or grated nutmeg, for garnish





    Heat a griddle pan over medium heat. Cut 4 thick slices of cinnamon raisin bread. Butter both sides of the bread slices with softened butter. Grill bread until brown and crispy on both sides, 2 minutes on each side.


    While bread grills, in a small saucepot, heat sweetened condensed milk or reduced fat sweetened condensed milk over medium low heat for 4 minutes. Remove from heat and stir in brandy.





    Cut each grilled slice of bread into quarters and pile into 4 dessert cups. Top bread with a few spoonfuls of hard sauce of sweetened condensed milk and brandy and a generous swirl of whipped cream. Garnish cream with a sprinkle of nutmeg and serve.








    But this is one of my favorites;





    For the pudding:


    4 tablespoons unsalted butter, softened, plus 4 tablespoons melted


    6 cups 1-inch cubes of day-old bread


    2 cups heavy cream


    2 cups milk


    2 pounds peaches, peeled and seeded, cut into 1-inch chunks


    1 cup sugar


    5 large eggs


    1 teaspoon pure vanilla extract


    1/4 teaspoon freshly grated nutmeg


    For the sauce:


    1 stick butter


    1 cup heavy cream


    1 cup sugar


    2 egg yolks


    1/3 cup amaretto





    For the Bread Pudding: Preheat the oven to 350 degrees F. Butter a 10 by 14-inch baking dish with 1 tablespoon of the softened butter.





    In a large bowl, combine the bread cubes, heavy cream and milk and let sit for 15 minutes, stirring occasionally.


    While the bread is soaking, heat the remaining 3 tablespoons of softened butter in a large skillet and, when butter begins to bubble, add the peaches and 1/4 cup of the sugar. Cook, stirring occasionally, until peaches are golden brown around the edges and softened, 4 to 6 minutes. Set aside.





    In a medium bowl, combine the eggs, the remaining 3/4 cup of sugar, vanilla, and nutmeg and whisk well to combine. Stir the egg mixture into the bread mixture and fold to combine. Add the warm peaches and fold gently but thoroughly to combine. Pour into the prepared dish. Drizzle with the melted butter and bake until golden brown, puffed, and slightly firm when pressed in the center, 45 minutes to 1 hour. Cool on a wire rack until just warm, about 20 minutes.





    For the Amaretto Sauce: In a small, heavy enameled or other non-reactive saucepan over medium low heat, add the butter and cook until melted. In a small bowl combine the cream, sugar, and egg yolks and whisk to combine. Add the cream mixture to the melted butter and stir well. Cook, stirring constantly, until the sauce thickens and coats the back of a spoon, about 10 minutes. Remove from the heat immediately and add the amaretto. Transfer sauce to a small heatproof bowl and serve hot or warm over warm bread pudding.
    Many of the above look good, but all seem to be missing vanilla. That is a MUST IMHO for a good bread pudding. I'd add at least 2 tsp of good vanilla to any recipe you choose.





    And opt for a recipe with more milk (even if it's #2, as those with smaller amounts tend to make a very hard/tight pudding). And a good sauce or whipped cream will do wonders. I was going to look up a few recipes I have, but look like you have good basic ones, so thought I'd just post a few important ingredients to add IMHO.





    And also remember the longer you soak the bread, the more it will have a custard type texture. I use the same tip for making yummy thick cut french toast (and always add vanilla and almond extracts!).

    This is a really flexible banana bread recipe that doesn't use any eggs. You won't find many eggless banana bread recipes, and you certainly won't find many banana bread recipes (with or without eggs) that taste THIS good! Whether allergic to eggs or not, it's a treat! To top it off, it's amazingly versatile. If you're out of something, it's easy to substitute something else. Or change it to have some variety. Almost any way you could make it, it's totally moist and totally delicious!!!





    Ingredients:


    1/2 c shortening (can substitute part butter, margarine, applesauce, or yogurt)


    3/4 c organic cane sugar (can substitute white sugar or part brown sugar)


    1 1/2 c wheat flour (can use all-purpose white or part oat flour)


    1 tsp baking soda


    1 tsp sea salt (can use iodized table salt)


    1/2 tsp cinnamon (optional)


    4 small ripe bananas (can substitute 1/4 cup of sugar for one banana)*


    1 tsp vanilla extract (optional)





    Preheat oven to 325° F. Lightly grease 8 x 4 bread loaf pan.





    Cream shortening and sugar in large bowl. Slowly sift in flour, baking soda, salt, and cinnamon. Mash bananas in separate bowl and then add in to large bowl and mix. Add vanilla extract. Can also add nuts, chocolate chips, raisins, or other fruit if desired. Pour batter into greased pan.





    Bake for 60 minutes or until knife comes out clean.





    Allow to fully cool before slicing.





    *For banana zucchini bread, use one banana and one cup grated zucchini.

    1 cup Oats, Steel Cut


    1 cup Buttermilk, at room temperature


    1/2 cup Oat Flour

    1/4 tsp Salt


    1/3 cup Currants


    Butter for Greasing Baking Sheet


    4 Tbsp Unsalted Butter, softened and cut into small pieces

    Preheat the oven to 350 degrees.





    Place the oats in a pie pan and toast them for 20 minutes, stirring often to toast evenly and not burn. When slightly golden, remove. Combine with the buttermilk in a small bowl and let stand for 20 minutes.





    In a large bowl, combine the flours, baking soda, sugar, salt and dried currants.





    Reset the oven to 400 degrees and butter the baking sheet.





    Using a pastry blender, cut the 4 Tbsp. butter into the flour until the texture is coarsely crumbled, then stir in the buttermilk/oat mixture until combined. Flour your hands and scoop the dough, forming it into a ball. Do not over-mix. Press the ball of dough directly onto the pan, then press into a 3/4'; circle. With a sharp knife, score the surface, almost to the bottom, making eight wedges. Brush the surface with milk and sprinkle a bit of sugar and cinnamon on top.





    Bake for 12 to 15 minutes. Cut into wedges. Makes 8 scones.

    The recipe wasn't submitted by Dale herself. It was forced out of her under coercion, and submitted by one of her friends. After discovering Dale's recipe, I have made hundreds of loaves, and have given many as gifts. Everyone loves it.





    This recipe will not disappoint. Enjoy. Oh, the secret as to what makes this bread so luscious? It's the addition of sour cream.








    Dale's Banana Bread





    1 stick butter, softened


    2 eggs, well beaten


    1/4 cup sour cream


    1 teaspoon baking soda


    1 cup mashed bananas


    1 1/2 cups sifted flour


    1 1/2 teaspoons baking powder


    1 teaspoon vanilla


    1/4 teaspoon salt


    1 cup chopped nuts (optional)





    Preheat oven to 350*F. Grease and flour 1 9'x5' loaf pan.





    Cream butter and sugar. Add eggs. Add sour cream which has been mixed with baking soda. Stir in bananas. Add flour, baking powder, vanilla, and salt. Stir in nuts, if desired. Pour into prepared pan and bake for one hour or until toothpick inserted near center comes out clean.





    Remove from pan to cool on rack.





    Makes one loaf.








    EDIT: Don't throw out any bananas that you are unable to use. Simply mash then with a fork, measure the amount you will need for your recipe (depending on which of these you choose) and freeze in a zip-lock baggie. I do this all the time.





    When I'm ready to bake, I simply remove a package from the freezer, let thaw for an hour or so, and add directly to my recipe. By freezing the bananas only, you save loads of freezer space. You can do this with just about any ingredient that would work in quick breads and muffins. Most items freeze very well.Need awesome banana bread recipe (or advice) please!?

    1/3 cup packed brown sugar


    1/3 cup granulated sugar


    1/4 cup Sunsweet Lighter Bake


    2 large eggs


    1 1/2 cups mashed ripe banana


    2 cups all-purpose flour


    1 1/2 teaspoons baking powder


    1/2 teaspoon baking soda


    1/2 teaspoon salt


    1 cup chopped walnuts (optional)





    Coat 9 x 5-inch loaf pan with cooking spray; set aside.





    Beat together sugars, Lighter Bake, eggs and banana.





    Combine flour, baking powder, baking soda and salt; stir into batter until just moistened. Stir in walnuts. Spoon batter into prepared pan. Bake in preheated 350 degrees F oven for 55 to 60 minutes or until wooden pick inserted into center comes out clean.





    Cool 10 minutes. Remove from pan and cool completely on rack. Bread can be wrapped in foil and frozen for up to 1 month.

    I searched and searched for the best banana bread recipe and I have never found one that can add up to this one. It is delicious. Exactly what I was looking for, so here it is. I hope you like it as much as we do.





    1 hour | 5 min prep





    Ingredients:


    2/3 cup oil


    2 large eggs


    1 cups mashed ripe bananas


    1 cups plain flour


    1 cups sugar


    1 (3 1/2 ounce) box French vanilla instant pudding


    1/2 teaspoon salt


    1/2 teaspoon baking soda





    Preheat oven to 325掳F.





    Directions:


    Mix oil, eggs and mashed bananas.


    Combine remaining ingredients and add to banana mixture.


    Bake in a 9 x 5 x 3 inch pan at 325 for 1 hour or until it test done. Some ovens vary in temps. (Ff you are following the recipe, there is no need to grease the pan)





    **This can easily be doubled for two loaves.
    Oh ya, hands down! A great recipe.

    1/3 cup chopped nuts





    Preheat oven to 350. Puree bananas in food processor or blender 91 cup puree). In large bowl, combine flour, sugar, cocoa, baking soda, salt and baking powder. Add eggs, oil, and bananas; mix just until dry ingredients are moistened. Stir in nuts. Pour batter into greased 9 x 5 inch loaf pan. Bake 55 to 60 minutes or until wooden toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove form pan. Cool completely before slicing. Loaf may be stored in refrigerator, well wrapped for up to 1 week.

    One of my favorites is one that I call 3-2-1 bread. Three cups flour, 2 Tbsp. sugar, one (12 oz.) beer. I can't remember the temp or time on the baking right off the top of my head right now. You can toss whatever else you like in there. Cheese, olives, dried fruit, diced chiles, you name it. I'll guess 365F for an hour, check on it every once in a while.

    Take two cups of flour, a cup or less of water, a few tablespoons of butter or olive oil and mix with a half cup to two thirds cup each of raisins and pecans. Add the raisins and candied fruit at the bread machine's signal for adding extra ingredients. Remove the dough from the bread machine at end of dough cycle. Place it in a bowl, cover with a cloth and let it rest for 10 minutes.


    **Divide the dough into 12 pieces. Shape the pieces into balls and place them 3 inches apart on a lightly greased baking sheet. Cover and let rise in warm place until almost doubled, about 45 minutes to an hour. Bake in a preheated oven at 375潞 for 15 to 18 minutes, or until light brown on top. Remove from the oven. Place the baking sheet full of buns on a wire rack to cool. Prepare the glaze, then spread it over the warm buns. Let the buns continue to cool on the baking sheet.     1 1/2 ounces compressed fresh yeast


    1 quart warm water

    8 cups white rye flour

    DIRECTIONS


    First, make the sourdough starter. Crumble the yeast into a large bowl. Whisk in 1 quart of warm water and 2 tablespoons of sugar until dissolved. The water should be just slightly warmer than body temperature. Gradually whisk in 4 cups of flour, continuing to mix until all lumps are gone. Cover with a dish towel, and let sit for 24 hours at room temperature.


    After 24 hours, stir well, cover, and let stand another 24 hours. It will be a thin, light-colored sourdough which is then ready to use.


    In a large bowl, stir together the rye flour, 4 cups of all-purpose flour, salt and sugar. Mix in the sourdough starter using a wooden spoon, then stir in 2 cups of warm water. I transfer the dough to a heavy duty stand mixer to mix the first couple of minutes, then it can't handle the heavy dough and I start using my hands by turning the dough out onto a floured surface. A clean countertop works best. Knead the dough, adding a few tablespoons of water at a time if it is too stiff. Fold the dough over, pull it apart, whatever you can do to get it kneaded up good. Total kneading time should be 15 to 20 minutes to get a smooth dough. Place the dough in a large bowl, cover, and let rise until doubled, 1 to 2 hours.


    When the dough has risen, scrape it out of the bowl and back onto a floured surface. Knead for about 5 minutes. This is important to activate the gluten. Shape into 1 or 2 long loaves. Place on baking sheets, and let rise for about 1 hour, or until your finger leaves an impression when you poke the bread gently.


    Preheat the oven to 425 degrees F (220 degrees C). Bake the bread for about 45 minutes for 2 loaves, 1 1/2 hours if you made one big loaf. Don't worry if the crust is dark. The bread will be delicious and so will the crust. Cool completely before cutting. I always freeze half.Anyone have a recipe for german sourdough double crust rye bread?

    The night before baking, start the poolish.





    about 1/2 cup starter





    3 cups bread or all-purpose flour





    1 cup Rye flour





    2 cups of water.





    Mix it all together, cover and let sit overnight.





    The Next Morning.





    Add to the poolish:





    3 cups of flour as before





    1 cup of Rye, as before





    1 large (raw) Onion, finely chopped





    (Optional) 1 Tablespoon Dried Dill





    1 Tablespoon Salt





    3/4 Cup water.





    Mix well and let sit for twenty minutes.





    This makes a pretty wet dough, one of you scientists can figure out the hydration. Because of the rye flour its quite sticky. I find the best way to mix it is to just get my hands in there and squish it all together.





    After it sits, knead for 10 minutes. You will need to use quite a bit of flour as the dough is very sticky. After kneading cover and let rise until doubled, about two hours.











    After rising, dump the dough onto a well floured surface and cut in half. Stretch each half **gently** into a ball, then **gently** stretch into a loaf shape. You don't want to squish the air bubbles. I find the ';envelope'; method of shaping just a bit too vigorous.





    Transfer the the loaves onto baking paper, cover and let rise for about an hour.














    Sourdough Onion Rye - Ready for the Oven





    Meanwhile, preheat your stone and your oven to 450/220. Then transfer your loaf onto the stone, I use the back of a cookie sheet as a peel. When the loaf is in the oven use whatever steam method you prefer, I simply toss a cup of water into the bottom of the over and shut the door. Bake for about 25 minutes, turn the loaf once. I have a very small oven, so I can only bake one loaf at a time.





    Take the bread out, and let it cool for as long as you can, and then enjoy! Also makes great toast!

    PREHEAT OVEN TO 350 COMBINE FLOUR, BAKING SODA, AND SALT IN A BOWL. CREAM THE BUTTER IN A MIXING BOWL. GRADUALLY ADD THE SUGAR AND MIX TO WELL BLENDED. ADD THE EGGS AND THE BANANA MIX UNTIL WELL BLENDED. COMBINE THE MILK AND LEMON JUICE IN A LARGE BOWL. ALTERNATELY MIX THE FLOUR MIXTURE INTO THE BANANA MIXTURE. ADD A LITTLE AT A TIME, BEGINNING AND ENDING WITH THE DRY INGREDIENTS. BLEND WELL AFTER EACH ADDITION. ADD NUTS. TURN THE BATTER INTO A HEAVILY BUTTERED 9 X 5 X 3 INCH LOAF PAN. BAKE FOR ONE HOUR OR UNTIL BREAD IS GOLDEN AND SPRINGS BACK WHEN TOUCHED. COOL IN PAN FOR TEN MINUTES. TAKE BREAD OUT OF PAN AND COOL COMPLETELY.

    2 cups of flour


    2 tsp baking powder


    1 teaspoon salt


    1 Tblsp shortening


    1 Tblsp sugar





    Mix flour, baking powder, salt, shortening and sugar with enough water to knead.





    Knead until smooth.





    Roll out, on a lightly floured board, covered with a cloth and let lighten.





    Then, bake at 350 degrees until brown on both sides (in a lightly greased frying pan) or for authenticity, on top the stove at very low heat. Serve warm with lots of butter.





    Serves 6.

    Hollywood bread was around in the 60s and 70s but the company stopped distributing it in New Orleans.     I have looked all over the web, but can't seem to find a really light fluffly yeast (not cake-like, but more bread-like) donut recipe.

    1/3 cup warm water (105掳F to 115掳F)


    1/3 cup warm milk (105掳F to 115掳F)


    2 envelopes dry yeast


    3 3/4 cups all purpose flour


    2 teaspoons salt


    3 large eggs


    1/4 cup sugar


    1 1/2 cups (3 sticks) unsalted butter, each stick cut into 4 pieces, room temperature





    1 egg, beaten to blend with 1 tablespoon water (for glaze)





    Place 1/3 cup warm water, warm milk, and yeast in bowl of standing heavy-duty mixer; stir until yeast dissolves. Fit mixer with dough hook. Add flour and salt to bowl; mix on low speed just until flour is moistened, about 10 seconds. Scrape sides and bottom of bowl. Beat in 3 eggs on low speed, then add sugar. Increase speed to medium and beat until dough comes together, about 3 minutes. Reduce speed to low. Add butter, 1 piece at a time, beating until each piece is almost incorporated before adding next (dough will be soft and batter-like). Increase speed to medium-high and beat until dough pulls away from sides of bowl, about 7 minutes.





    Cover bowl with plastic wrap. Let dough rise at room temperature until almost doubled in volume, about 1 hour. Lift up dough around edges and allow dough to fall and deflate in bowl. Cover bowl with plastic and chill until dough stops rising, lifting up dough around edges and allowing dough to fall and deflate in bowl every 30 minutes, about 2 hours total. Cover bowl with plastic; chill dough overnight.





    Butter and flour three 7 1/2x3 1/2x2-inch loaf pans. Divide dough into 3 equal pieces. Cut each dough piece into 4 equal pieces. Roll each into 3 1/2-inch-long log, forming 12 logs total. Arrange 4 logs crosswise in bottom of each prepared loaf pan. Place loaf pans on baking sheet. Cover pans with waxed paper. Let loaves rise at room temperature until dough almost fills pans, about 2 hours.





    Preheat oven to 400掳F. Gently brush top of loaves with egg glaze. Bake until loaves are golden brown and sound hollow when tapped, about 30 minutes. Cool in pans on racks 15 minutes. Turn loaves out onto racks; cool at least 1 hour. (Can be made ahead. Cool completely. Wrap loaves in foil; place in resealable plastic bags and store at room temperature 1 day or freeze up to 1 month.     BAKED DOUGHNUT MUFFINS





    All the yumminess of a doughnut without the mess of hot oil.





    For Doughnuts:


    1 large egg


    1 1/2 cups all-purpose flour


    1/2 cup sugar


    2 teaspoons baking powder


    1/4 teaspoon salt


    1/4 teaspoon nutmeg


    1/2 cup milk


    1/4 cup melted butter


    1/2 teaspoon vanilla extract





    For Topping:


    1/3 cup sugar


    1/2 teaspoon ground cinnamon


    3 Tablespoons melted butter





    Preheat oven to 350 潞F. Grease and lightly flour a 12-cup muffin tin. In a small bowl, sift together flour, 1/2 cup sugar, baking powder and salt in a small bowl. In a separate medium bowl, whisk together the egg, milk, 1/4 cup butter and vanilla. Add dry ingredients to this mixture, mixing until just moistened.





    Fill the muffin tins three-fourths full. Bake for 20 to 25 minutes or until an inserted toothpick comes out dry.





    To make the topping: In a small bowl or cup, mix 1/3 cup sugar and cinnamon together.





    Brush muffins with 3 tablespoons melted butter and roll in sugar/cinnamon.


    (12 servings)

    we have relocated to the west coast and really miss our favorite restaurant. I found the recipes for the oil dip and my favorite mustard crusted chicken, but I can't find a recipe that even comes close to the fantastic bread (I admit to being a carb addict.)     INGREDIENTS:


    2/3 cup warm water (110 degrees F/45 degrees C)


    1 teaspoon active dry yeast


    1 teaspoon white sugar


    2 cups all-purpose flour


    1 teaspoon salt


    1/4 cup ghee


    2 tablespoons plain yogurt


    2 teaspoons kalonji (onion seed)





    DIRECTIONS:





    Whisk the warm water with the yeast and sugar until the yeast is dissolved. Cover and let stand in a warm place for 10 minutes.


    Sift flour and salt three times into a large bowl add the yeast mixture, half of the ghee and all the yogurt. Mix into a soft dough then knead on a floured surface for about 5 minutes or until dough is smooth and elastic. Place the dough in a large greased bowl, cover and let stand in a warm place for 1 1/2 hours or until the dough is doubled in size .





    Punch down dough then knead for 5 minutes. Divide dough into 6 pieces. Roll each piece out into 8 inch round naans.


    Cover an oven tray with foil and grease the foil. Brush the naan with a little of the remaining ghee and sprinkle with some of the kalonji. Cook naan one at a time under a very hot grill for about 2 minutes on each side or until puffed and just browned.

    INGREDIENTS:





    2 cups bread flour


    1 teaspoon salt


    2 tablespoons vegetable oil


    2/3 cup water





    DIRECTIONS:





    In a large bowl, sift together flour and salt. Add oil and mix in with a fork until flour is crumbly. Mix in water until the dough pulls together. Turn dough out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Cover and set aside for 45 minutes.





    Knead dough again until smooth; divide into six equal parts. Form each part into a round. Roll out each round as thinly as possible; dust with flour to keep from sticking.


    Invert a heavy cast iron pan over burner and heat. Spread roti over pan and cook. Roti will cook in 40 to 50 seconds. Tiny black spots will appear when it is finished. Fold Roti and serve hot.

    Ingredients:


    Flour: 100 gms


    Ghee: 50 gms


    salt to taste


    water to knead





    Direction





    Mix all ingredients except water. Add a little at a time and form a soft pliable dough. Always keep covered with a moist cloth, and see that the cloth is kept moist. One paratha requires a pingpong ball sized lump of dough. Henceforth in this section 1 lump means this size. For rolling, use dry flour as in phulka, etc., to roll easier. Dust the roti with dry flour now and then.


    Roll a thick roti . Place a tbsp. of filling at centre. Brings the ends to the centre from 4 or 5 points. Overlap ends so they do not leave an opening. Press gently. Dust with dry flour, proceed to roll to 6'; diameter. Then Heat a heavy griddle, place paratha on it. Allow one side to cook have brown golden patches. Turn repeat for other side. Drizzle some oil and flip. Drizzle oil on other side. Sizzle till done.

    well, here in Iran , we have many kinds of Flat Breads .


    But the most Famous one is called ';Lavash'; . and I know at least Iranian bake this kind of bread for 5000 years.!

    Ethiopia has a flat bread called Injera, for example, I think many cultures have at elast one type of flat bread, and they are usually the most antiques recipes.


    Here麓s one recipe for pita bread:








    Title:Pita Bread





    Yield: 1 servings





    2 1/2 c Warm water


    1 t Sugar


    3 1/2 t Active dry yeast


    1/2 t Salt


    5 1/2 c Whole wheat flour





    Place water and sugar in large bowl and stir. Add yeast and stir


    slightly. Let rest for 5 minutes. Mix in salt and flour gradually,


    starting with 3 1/2 cups flour then adding the rest. More or less


    water may be required, depending on the brand of the flour. Use


    enough flour to prevent dough from clinging to bowl.





    Knead well for 5 minutes. Place a little vegetable oil on palms


    of hands and smooth all over to prevent crusting. Cover with


    plastic, then a cotton towel, and allow to rest for 1/2 an hour.





    Set oven at 500F. Divide dough into 8 balls. Roll out each ball


    into 1/4-inch thickness. Let rest covered for 20 minutes on


    generously floured table or counter top. Bake on ungreased cookie


    sheets for 5-8 minutes or until lightly browned. The higher the


    oven temperature the better the results. May be kept in a plastic


    bag in the refrigerator for several days or may be frozen.





    To warm pita, place on the rack in the oven at 300F for 1-2


    minutes.





    Tips: Make sure there are no creases in the dough and that the


    pitas are lying flat on the cooking sheet.





    Carefully open the oven door! At a temperature of 500


    degrees, you'll get a blast of super hot air in your face.
