Moroccan flaky flat bread - does anyone have a recipe?

When we were in Morocco we were served a flat pancake like layered bread for breakfast. Does anyone have a recipe, or know what it is called so I can seek out a recipe?Moroccan flaky flat bread - does anyone have a recipe?
I think you are referring to Ahouifi M'semmen, which is a Moroccan flaky flat griddle cake. They are delicious, here's the recipe:





Ahouifi M'semmen (Moroccan)





(10 servings)





Ingredients:





2 pounds flour


2 and 1/2 cups water


1 Tablespoon salt


butter for frying


vegetable oil for kneading as needed


sugar for topping


cinnamon - optional





METHOD:





Combine flour and salt in a large mixing bowl. Add water a little at a time, mixing with hands.





On an oiled surface (helps a lot to oil up your hands too), knead the the dough until smooth. Rip off pieces of dough and roll to form golf-ball sized balls.





When all dough is made into balls (about 15 to 20 balls), press the balls down with your hand and then stretch dough until it is very thin. Fold in the edges to form a 3 or 4 inch square.





On a buttered skillet at medium high heat, cook each square until both sides are browned.





We like to sprinkle with sugar right away (sometimes cinnamon and sugar). You can also brush with honey.





For a special treat, fold special fillings into your squares. Ground nuts and sugar is wonderful, also Nutella.

Mufleta Recipe





3 3/4 cups flour


1 1/2 cups warm (not boiling) water


Pinch of salt


Vegetable (not olive) oil, as needed





Instructions for the Mufleta recipe:





Place flour and salt in bowl.


Scoop out a ';well'; in the middle and add water there.


Mix, adding a little extra water if dough seems too dry.


Mix together until a light and elastic dough is formed.


Divide dough into 15 to 20 small balls.


Cover with dish towel and let stand 30 minutes on a flat, well-oiled surface.


Oil hands and on oiled surface, roll dough into thin circles.


Spread small amount of oil in frying pan and cook mufleta over medium heat.


Cook both sides.


Pan does not need to be re-greased before cooking the rest of the mufletas.


Place on a plate and cover with dish towel to keep them warm.


Serve warm with butter and honey.


These may be frozen and re-heated in microwave.


Makes 15 to 20 mufletas.
yes mix a bread doe in a Moroccan mans hair and scalp that has bad dandruff. Really need the doe in there, then place in the oven at 320, for 12 minuets until it's golden brown, serve and enjoy :()
