GINGERBREAD MEN COOKIES

... fun to make... this dough is easy to handle, rolls out smoothly, hold its shape, and best of all is ';yummy'; to eat.

Bring to a boil, stir well and set aside to cool:

1/2 c. molasses

1/2 c. sugar

1 tbsp. vinegar

When cool, beat slightly:

Add to the mixture. Sift together:

2 1/2 cups flour

1/2 tsp. salt

1/2 tsp. baking soda

1/2 tsp cinnamon

1/2 tsp. ginger

Add to the mixture, blend and pat into a ball. Roll in waxed paper and refrigerate overnight. Next day, roll out on lightly floured dough board to 1/4 inch thickness and cut in desired shapes. Bake on very lightly greased baking sheet in 375掳F for 10-15 minutes. When cool decorate with a tube of already prepared icing from the grocery.

Note: The temperature in ovens does vary. Use an oven thermometer or have your oven calibrated. Adjust temperature according to the results you're getting: if 375掳F in your oven is too hot, try 350掳F.
GINGER BREAD COOKIES

INGREDIENTS

1 cup white sugar

2 teaspoons ground ginger

1 teaspoon ground nutmeg

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 1/2 teaspoons baking soda

1 cup margarine, melted

1/2 cup evaporated milk

1 cup unsulfured molasses

3/4 teaspoon vanilla extract

3/4 teaspoon lemon extract

4 cups unbleached all-purpose flour

DIRECTIONS

Preheat oven to 375 degrees F (190 degrees C). Lightly grease cookie sheets.

In a large bowl, stir together the sugar, ginger, nutmeg, cinnamon, salt, and baking soda. Mix in the melted margarine, evaporated milk, molasses, vanilla, and lemon extracts. Stir in the flour, 1 cup at a time, mixing well after each addition. The dough should be stiff enough to handle without sticking to fingers. If necessary, increase flour by up to 1/2 cup to prevent sticking.

When the dough is smooth, roll it out to 1/4 inch thick on a floured surface, and cut into cookies. Place cookies on the prepared cookie sheets.

Bake for 10 to 12 minutes in the preheated oven. The cookies are done when the top springs back when touched. Remove from cookie sheets to cool on wire racks.

if you want at the end (before you bake though) you can use cookie cutteres to make gingerbread men
I truely recommend this recipe. Been using it for years. And its really simple to make. THIS IS REAL GINGERBREAD!!!

Ingredients:

125g soft butter

1/2 cup (100g) firmly packed brown sugar

1/2 cup (125mL) treacle

1 egg yolk

2 %26amp; 1/2 cups (375g) plain flour

1 tablespoon ground ginger (powder)

1 teaspoon bicarbonate of soda

Beat butter and sugar in small bowl with electric mixer until creamy; beat in treacle and egg yolk then stir in sifted dry ingredients. make sure it forms a ball (use hands for this part) and wrap up with cling wrap. Refrigerate for 30 minutes.

Roll out dough between baking paper sheets until 4mm thick. Cut out shapes using cookie cutters or your own stencils. Place on trays covered in baking paper and cook for ten minutes in a moderate oven (around 180 degrees fan forced) Cooking time also depends on size and thickness of cookies.

Let cookies cool before icing.

ROYAL ICING

2 egg whites

3 cups (approx.) icing sugar

Food Colouring

Beat egg whites in small bowl with electric mixer until just frothy; gradually beat in enough sifted icing sugar for mixture to form very stiff peaks. Divide icing into separate bowls and add food colouring. Ice biscuits.

EVEN IF YOU DON'T PICK THIS AS THE BEST, TRY THE RECIPE AND YOU WILL BE PLEASED.
