Would you eat the rind? (I don't) I'm just wondering how many people actually like the rind. :-)What do you put your brie on. How do you enjoy it? Do you know a recipe or are u stuck with bread or crackers
release the brie from the fridge for a while cause to avoid the rind being to hard....my husband and i tried once with pasta, not a bad idea though! But how else a brie can taste fantastic without a baguette and a glass of ';crozes hermitage'; BON APPETITE LES AMIS....What do you put your brie on. How do you enjoy it? I love baked brie with apple and pear slices. Yes I will eat the rind, but I prefer to remove it.
Split the brie in half and spread with either pesto sauce or roasted red pepper and garlic pesto the wrap in a piece of phillo dough and bake at 400 for about 20 minutes.
Can be eaten plain or with crackers and it is really great.
I have made with and without the rind. It doesn't make that much difference.
I eat it all with red grapes.
Try it (without the rind) for a cheese sauce.
Butterfly chicken breasts and stuff them with brie and prosciutto, and bake them in the oven. It's lika a fancier version of chicken cordon bleu.
Brie is great on crackers, and bread. Funny enough it goes well with French Bread and a pint. There a lot of recipes that use Brie.

Melt the brie slightly in the oven just to get it warm and then cover it with your favorite jam and serve with crackers.
