Can anyone give me recipes for Pan Dulce (Mexican Sweet Bread)? Especially ';cuernitos';(not the wedding cookie)?

Any recipes would be appreciated, EXCEPT ';conchas'; or Mexican Wedding Cookies.

PAN DULCE (SWEET ROLLS)





3 1/2 to 4 c. all purpose flour


1 pkg. active dry yeast


1 c. milk


1/4 c. sugar


1/4 c. shortening


1 tsp. salt


2 eggs


2/3 c. all purpose flour


1/2 c. sugar


1/4 c. butter


2 beaten egg yolks


1/4 tsp. vanilla





In large bowl, combine 2 cups of the flour and yeast. In a saucepan heat milk, 1/4 cup sugar, shortening, and salt until warm (115 to 120), stirring constantly. Add whole eggs, and beat at low speed of electric mixer for 30 seconds scraping bowl. Beat 3 minutes at high speed. By hand stir in enough remaining flour (1 1/2 to 2 cups) to make moderately stiff dough. Knead dough on lightly floured surface 8 to 10 minutes or until smooth. Place in greased bowl; turn once to grease surface and cover bowl. Let rise 1 to 1 1/4 hours or until doubled in bulk, then punch down. Divide into 16 equal pieces. Shape into a smooth ball. Roll or pat each ball into a 3 inch circle. Place on a greased baking sheet 2 inches apart.


Combine the 2/3 cup flour and the 1/2 cup sugar. Cut in butter with pastry blender to make fine, even crumbs. With a fork, stir in egg yolk and vanilla. Mix with hands until well blended. Divide mixture into 16 different portions, and with a rolling pin, roll each to a 3 inch circle on a light floured surface. With a spatula transfer each circle to top of dough on baking sheet. Slash top into squares, circles, or shell forms. Cover and let rise about 30 minutes or until doubled in bulk. Bake in a 375 degree oven for 15 to 18 minutes. Makes 5 lbs

MEXICAN SWEET BREAD (PAN DULCE)





1 (16 oz.) frozen bread dough


1/2 c. sugar


1/2 c. flour


1/4 c. melted butter


2 tbsp. slightly beaten egg


1/2 tsp. cinnamon





Let frozen bread dough thaw until pliable. Cut loaf into 16 pieces and shape into balls. Place balls on greased baking sheet, 2'; apart. Flatten balls slightly with palm of your hand. Mix together sugar, flour, butter, egg and cinnamon. Spread 1 tablespoon topping on each bun. Let rise until double in size. Bake in 400 degree oven for 10 minutes or until lightly browned. Remove from pan to cool on rack. Makes 16 rolls.

4 c. flour


2 c. shortening


1/3 c. tea (use 1 stick if cinnamon to make tea)


1/2 tsp. dry yeast


1 tbsp. ground cinnamon


1/3 c. sugar





Put dry yeast in warm cinnamon tea. Beat shortening until fluffy. Add dry ingredients. Knead a little; add cinnamon tea. Roll and cut into any shape. Bake at 350 degrees until lightly brown. Roll hot cookies in cinnamon sugar.

Pan Dulce





1 package active dry yeast


3/4 cup warm water


3-l/2 cups flour


3/4 cup sugar


3/4 teaspoon salt


4 tablespoons melted butter or margarine


3 eggs, beaten





Topping


1 cup sugar


1 cup flour


1/2 cup melted butter or margarine


1 egg, beaten


1-1/2 teaspoons cinnamon


1/4 teaspoon salt








Preparations: Set out the eggs about 1/2 hour to an hour before you begin so they'll reach room temperature. Preheat the oven to 400 degrees.





Pan Dulce: Place yeast in water and let stand until yeast dissolves. Sift flour, sugar and salt together in bowl. Add yeast mixture, melted butter or margarine and eggs and beat until smooth. Place dough in greased bowl, cover, and let rise in warm place until double, about 1 hour.





Topping: Place topping ingredients in a bowl and mix. Reserve. When dough has doubled, knead on lightly floured board until smooth and elastic. Shape dough into balls about 1-1/2 inches in diameter and place on greased baking sheet about 2 inches apart; press each ball to flatten slightly. Place about 1-1/2 tablespoons of topping on each roll. Let rolls rise until double, about 30 minutes.





Bake in preheated oven at 400 degrees until lightly browned, about 10 minutes. Serve warm or at room temperature with hot chocolate or coffee. Since pan dulce is a little on the dry side, the liquid accompaniment is important. Pan dulce freezes well. Thaw and reheat in a 400-degree oven for about 5 minutes.
