FINNISH FLAT BARLEY BREAD (Rieksa)
1 1/2 c. all-purpose flour
1 c. barley flour
1 1/2 tsp. sugar
1 1/2 tsp. baking powder
1 tsp. salt
1/4 c. solid vegetable shortening
1 c. buttermilk
1/2 tsp. baking soda
Process both flours, sugar, baking powder, salt and shortening with metal blade of food processor until it resembles coarse crumbs (6 pulses). Stir together buttermilk and baking soda, pour liquid through feed tube and pulse 4 to 6 turns until just combined.
Preheat oven to 425. Turn dough out onto oiled, 14 inch pizza pan and press evenly onto the pan. Pierce dough all over with tines of a fork.
Bake in center of preheated oven until lightly browned, 12 to 15 minutes. Remove from oven and cool slightly. Cut into wedges and serve warm with lots of butter. Makes one round flat loaf.I am looking for a recipe for Finnish Synoda Bread?
