Does anyone have an easy recipe for the Starter for Amish Friendship Bread?

You know, that yeasty gooey stuff you start off having before you make you bread.Does anyone have an easy recipe for the Starter for Amish Friendship Bread?
When making starter, it鈥檚 important that you don鈥檛 use metal utensils, do not refrigerate your starter supply (for fear of killing off the active ingredients) and only use glass, glazed ceramic or plastic bowls when preparing the bread.





It takes ten days to make starter correctly. Once you have created your own starter, it can be saved in zipper plastic bags and stored on the counter. To keep track of the days and the activity needed on each day, mark the bag with a permanent marker and cross the days off as you go, or use a label on a plastic container.





Making Starter


Starter is made with yeast, water, milk, flour and sugar


Day 1: Dissolve a packet of dry active yeast in 录 cup warm water. Add one cup of each of the following ingredients: Flour, sugar and milk. Mix and set aside.





Day 2 to 5: Stir starter with a wooden spoon. (Or knead the bag gently, burping if necessary).





Day 6: Add one cup of each of the following ingredients: Flour, sugar and milk. Stir or knead until blended. (This is called feeding the starter).





Day 7 to 9: Stir or knead, burping as necessary.





Day 10: Add one cup of each of the following ingredients: Flour, sugar and milk. Stir or knead until blended. Remove three cups of starter and store in separate plastic containers with one cup in each. Keep one starter for yourself and give the other two containers to friends, along with a copy of this recipe. The remaining starter, which will be about one cup, is what you will use to make bread.





Feeding starter is what keeps it alive or active. (Starter that has stopped bubbling should be discarded). To reduce the amount of starter you have, change the one cup increments to 陆 cup or 1/3 cup increments. Over time, the bread will continue to evolve and distinctive flavors will shine through





This is the same basic starter used in regular sourdough bread.





How to Bake Bread


Once you have reached Day 10, you are now ready to bake your bread.





Preheat the oven to 325 degrees. Then pour the remaining starter into a large ceramic bowl and add to it the following ingredients and mix well.





1 cup oil


陆 cup milk


3 eggs


1 teaspoon vanilla





In a separate bowl, combine the following dry ingredients. Mix until well blended.





2 cups flour


1 cup sugar


1 陆 teaspoons baking powder


2 tablespoons cinnamon


陆 teaspoon baking soda


1 box instant vanilla pudding (or experiment with other flavors)


陆 teaspoon salt


1 cup nuts (optional)





Make a well in the dry ingredients and dump the wet ingredients into the bowl. Mix well but do not over mix. Pour the bread into two greased and floured pans. Dust with a sprinkling of sugar instead of flour to make a sweeter, crispier crust. Bake for one hour or until the bread is golden brown and sounds hollow when tapped.





Important: While starter can be used at any time during the cycle, if used before Day 10, it will diminish the amount of product at the end of the ten day cycle. If planning on using the starter before the ten day period, simply feed the starter, then remove one cup and continue on with the recipe

Ingredients


1 (.25 ounce) package active dry yeast


1/4 cup warm water (110 to 115 degrees)


3 cups all-purpose flour, divided


3 cups white sugar, divided


3 cups milk





In a small bowl, dissolve yeast in water. Let stand 10 minutes. In a 2 quart container glass, plastic or ceramic container, combine 1 cup flour and 1 cup sugar. Mix thoroughly or flour will lump when milk is added. Slowly stir in 1 cup milk and dissolved yeast mixture. Cover loosely and let stand until bubbly. Consider this day 1 of the 10 day cycle. Leave loosely covered at room temperature.





On days 2 thru 4; stir starter with a spoon. Day 5; stir in 1 cup flour, 1 cup sugar and 1 cup milk. Days 6 thru 9; stir only.





Day 10; stir in 1 cup flour, 1 cup sugar and 1 cup milk. Remove 1 cup to make your first bread, give 2 cups to friends along with this recipe, and your favorite Amish Bread recipe. Store the remaining 1 cup starter in a container in the refrigerator, or begin the 10 day process over again (beginning with step 2).





Notes: Once you have made the starter, you will consider it Day One, and thus ignore step 1 in this recipe and proceed with step 2. You can also freeze this starter in 1 cup measures for later use. Frozen starter will take at least 3 hours at room temperature to thaw before using.
Amish Friendship Bread Starter





This is the Amish Friendship Bread Starter Recipe that you'll need to make the Amish Friendship Bread (below). It is very important to use plastic or wooden utensils and plastic or glass containers when making this. Do not use metal at all!





Ingredients:





1 pkg. active dry yeast


1/4 cup warm water (110掳F)


1 cup all-purpose flour


1 cup white sugar


1 cup warm milk (110掳F)





Directions:





1. In a small bowl, dissolve the yeast in warm water for about 10 minutes. Stir well.





2. In a 2 quart glass or plastic container, combine 1 cup sifted flour and 1 cup sugar. Mix thoroughly or the flour will get lumpy when you add the milk.





3. Slowly stir in warm milk and dissolved yeast mixture. Loosely cover the mixture with a lid or plastic wrap. The mixture will get bubbly. Consider this Day 1 of the cycle, or the day you receive the starter.





Amish Friendship Bread Recipe





Day 1 - receive the starter (the recipe for the starter is above)





Day 2 - stir





Day 3 - stir





Day 4 - stir





Day 5 - Add 1 cup each flour, sugar and milk.





Day 6 - stir





Day 7 - stir





Day 8 - stir





Day 9 - stir





Day 10 - Add 1 cup flour, 1 cup sugar and 1 cup milk. Divide into 4 containers, with 1 cup each for three of your friends and 1 cup for your own loaves. Give friends the instructions for Day 1 through Day 10 and the following recipe for baking the bread.





After removing the 3 cups of batter, combine the remaining cup of Amish Friendship Bread starter with the following ingredients in a large bowl:





2/3 cup oil


3 eggs


1/2 tsp. salt


1 tsp. vanilla


1 to 1 1/2 tsp. cinnamon


1 cup sugar


2 cups flour


1 1/4 tsp. baking powder


1/2 tsp. baking soda





Using a fork beat by hand until well blended. You can add 1 cup raisins and 1 cup nuts (optional).





Grease two loaf pans with butter, sprinkle with sugar instead of flour.





Bake at 325 degrees F for 45 minutes to 1 hour (individual oven temperatures vary). Cool 10 minutes, remove from pans. Makes two loaves of Amish Friendship Bread.
