Try the following
Bread pudding
200g/8oz bread, preferably stale, crusts removed
250ml/½ pint milk
150g/6oz mixed dried fruit
50g/2oz mixed peel, chopped
50g/2oz soft brown sugar
50g/2oz suet
2 tsp mixed spice
1 large egg, beaten
ground nutmeg (optional)
icing sugar or caster sugar to decorate
Method
1. Break bread into small pieces and place in a mixing bowl.
2. Pour over the milk and leave to soak for 30 minutes, then beat out the lumps with a fork to form a smooth mixture.
3. Add the fruit, mixed peel, sugar, suet, spice and egg and mix well.
4. Pour the mixture into a greased 18cm/7in square tin, smooth the top and sprinkle with nutmeg if liked.
5. Bake at 180C/350F/Gas4 for about 1-1½ hours until browned. Cool in the tin.
6. Cut the pudding into squares and sprinkle with caster or icing sugar. Alternatively serve hot with custard or cream.
or Spiced Bread Pudding with Brandy Cream
For the bread pudding:
8 oz (225 g) white or brown bread, crusts removed
2 teaspoons mixed spice
whole nutmeg
4 oz (110 g) sultanas
1 oz (25 g) currants
1 oz (25 g) raisins
2 oz (50 g) whole candied lemon or orange peel, chopped
3 tablespoons brandy
10 fl oz (275 ml) milk
2 oz (50 g) butter, melted, plus a little extra for greasing
3 oz (75 g) dark soft brown sugar
1 large egg, beaten
grated zest ½ orange
grated zest 1 lemon
1 tablespoon demerara sugar
For the brandy:
1 dessertspoon brandy
5 fl oz (150 ml) double cream
1 oz (25 g) golden caster sugar
You will also need a baking dish with a base measurement of 6¼ x 8 inches (15.5 x 20 cm), 1¾ inches (4.5 cm) deep, buttered.
Begin by placing the sultanas, currants, raisins and candied peel in a bowl. Pour over the brandy and leave aside to marinate. Then, in a large bowl, break the bread into ½ inch (1 cm) pieces. Add the milk, then give the mixture a good stir and leave it for about 30 minutes so the bread becomes well soaked. Pre-heat the oven to gas mark 4, 350°F (180°C).
Next, mix the melted butter, sugar, mixed spice and beaten egg together and then add to the second bowl. Now, using a fork, beat the mixture well, making sure there are no lumps, then stir in the marinated fruits, with any brandy remaining, and also the orange and lemon zest. After that, spread the mixture in the baking dish and sprinkle the sugar over it, along with some freshly grated nutmeg. Bake on the centre shelf of the oven for about 1¼ hours. Bread Pudding
3 ea Slices stale bread
1 cup Sugar
1/4 teaspoon Nutmeg
1/4 teaspoon Salt
2 1/2 cup Milk
2 tablespoons Butter
3 Eggs
1 teaspoon Vanilla
It is best to use a Hearty Bread for this recipe. Breads such as ';Wonder Bread'; do not work as well.
Cut bread into cubes, or roughly tear apart into chunks. Put Bread into bowl. In a blender, or by hand, mix Eggs, Milk, Sugar, Salt, Vanilla and Nutmeg. Pour over bread cubes and let soak at least one hour, or covered overnight in the refrigerator.
Pour all into a 3 quart liberally buttered oven proof casserole dish. (If any butter is left after buttering the casserole, place it in the bottom of the casserole before pouring in remaining ingredients. Place casserole in a pan of very hot water to come about 2/3 way up the casserole dish. Bake in a pre-heated oven at 325 degrees until done, about 30-40 minutes.
Pudding will raise like a Souffle, then collapse when removed from the oven. Serve warm or cold with or without your favorite “sauce” or Whipped Cream.Please, please WHO can give me a VERY simple ';Bread Pudding'; recipe, without ';Extras'; being added!!
just throw some bread and butter in a dish throw in some raisins and pour on some mixture of egg and milk and cook until you think its ready....easy peasy lol

This may not be as simple a recipe as you are looking for, but I can guarantee you that it's the best. It's from Pascale's Manale, a restaurant in New Orleans.
BREAD PUDDING

Ingredients:
- 3 Loaves French Bread
- 15 ozs. Raisins
- 1/2 Gallon Whole Milk
- 1/2 lb. Sugar
- 10 Eggs
- 1/2 Pound of Melted Butter
- 3 ozs. Vanilla Extract
Directions:
Cut French bread into cubes. Pour milk on French bread. Let milk soak into bread. Add the remaining ingredients to French bread mixture. Mix with hand until blended evenly. Pour mixture into ungreased pan.
Pre-heat oven at 350 degrees. Bake for 45 minutes to 1 hour. Makes 15 or more servings.
Topping
- 3 ozs. Brandy
- 1 lb. butter
- 8 ozs. sugar
- 2 ozs. vanilla extract
Let butter sit at room temperature until very soft.
Add the remaining ingredients and blend with mixer until smooth.
Pour over bread pudding.
1 pint milk,6 eggs,1/2 cup sugar and mix.butter bread pour over mix.bung into oven 160 degrees till set and golden,sprinkle with brown sugar.
Just leave out the raisins or anything else you don't want to add, e.i salt or vanilla, but i like it all. Use a heavy bread like french.

4 slices lightly buttered bread, cubed
2 cups milk
2 eggs
1/4 cup sugar

1/2 cup raisins
1/2 teaspoon vanilla extract
PREPARATION:
Place bread cubes in baking dish. In a mixing bowl, beat together milk, eggs, sugar, and and salt. Pour mixture over bread cubes; gently stir in raisins and vanilla. Place baking dish into a larger pan of hot water and bake for about 40 minutes, or until firm in center. at 350 degrees

Looks like most have given you recipes for the latter, although calling it Bread Pudding...
Bread Pudding is using stale bread, which has been soaked in milk, a variety of dried fruits, spices (mixed spice/cinnamon/nutmeg), suet and sugar. Sometimes apple is added - depending on the recipe. The whole lot is mulched together, transferred to a buttered baking dish/pan, sprinkled with sugar and baked until cooked to a rich dark brown. It is quite stodgy, moist inside and crispy baked on top. Delicious hot or cold, with or without custard.
P.S. Sorry, forgot the candied peel...
this is how i like bread pudding:
it is basically like making french toast...
use vienna bread, one inch thick slices.
sliced or shredded apples that have been tossed and coated with sugar, cinnamon and a bit of lemon juice
beat together eggs milk and vanilla. dip bread slices into the mixture and layer in a greased baking dish.
next layer the apple mixture and top with another layer of the bread slices dipped in the egg mixture.
bake in a low to moderate oven... 325F for about 25 min. sprinkle a little sugar on top and bake for an additional 5 to 8 minutes.
try it, unless you hate apples you will like this.
