Does anyone know the recipe for the Egg and I's banana bread?

I have a dear, elderly friend who just loves the Egg and I's banana bread. Obviously, they aren't going to give me the recipe, but I'd even settly for a copycat version. I';t's The Egg and I'; restaurant here in Las Vegas, Nv. Thanks so muchDoes anyone know the recipe for the Egg and I's banana bread?
Ingredients:


Cooking Spray


1 cup sugar


1/4 cup Promise spread


1/4 cup fat free milk


1/4 cup buttermilk


2 egg whites


1 2/3 cup mashed bananas (about 3)


1 cup whole wheat flour


2/3 cup flour


2 Tbsp wheat germ


2 Tbsp wheat bran


1 tsp baking soda


1/2 tsp salt


Method


Prehead oven to 350 degrees. Spray 9 X 5 loaf pan with cooking spray. Cream together sugar and Promise spread. Add milk, buttermilk, egg whites and mashed bananas, mix until well blended. Combine flours, wheat germ, wheat bran, soda and salt until blended thoroughly. Add dry mixture to wet mixture and mix until just blended-do not overmix. Spoon batter into the greased 9 X 5 loaf pan. Bake at 350 degrees for 1 hour 5 min or when toothpick inserted into middle comes out clean. You may have to adjust temp if using a dark metal pan. This timing assumes a glass loaf pan.





Notes: I wanted a moist, yet healthy banana bread to serve my family and came up with this recipe. Nobody can tell that it is made with whole wheat flour, wheat germ and wheat bran!
